Eer nan: bread shaped like a saddle (it always breaks)
Eer nan is a boat of bread with cheese and an egg yolk in the seat. For a name day. I have tried it nine times. Four times the sides fell, three times the egg went everywhere, twice it came out beautiful and I forgot to take a picture.
Dough: the same as for non, with a little milk. Roll an oval, fold the edges up and twist the ends so they stand like a saddle front and back. Fill with a mix of fresh brined cheese (ak panyr) and a little egg white. Bake 12 minutes until the sides are gold. Then break the yolk into the cheese and put a big piece of butter on top. You tear the bread edge and dip it, like in the stories.
My son says it is a Georgian dish. I say Georgians are welcome to the recipe, in Irad it is ours since the day my grandmother made it. They can have the khinkali.
