Tuyak is a man's recipe
10 January 2016 · Soups
My husband makes tuyak. It is the only dish in the house he is allowed to make, and he does it as a ritual: Saturday night he washes the sheep's feet, puts them on, and every hour until two he comes to look and says "not yet". In the morning the whole house smells of the stove.
The recipe is on the Kündölük of Zarina, from some years ago, she does it well, so I will not repeat. I only add: he puts in more garlic than she does. Much more.
The men eat it at six, with bread, with their jackets still on. After the second bowl they start to talk about their fathers. This is the real function of tuyak.

More garlic is correct.
