The jam-season sugar mystery
Why sugar costs more in July, every year, and what a family with a basin of apricots can do about it.

Every July half the country makes jam at the same time. Demand for sugar jumps for six weeks, the wholesalers know it, and the price on the shelf rises before the apricots are even ripe.
The cheapest fix is the oldest: buy in May. A 50 kg sack bought before the season, shared between two neighbours, costs noticeably less per kilo than the 1 kg packets bought in the third week of July. The sack keeps for a year in a dry room. Your grandmother knew this; she just didn't call it "forward buying".
