Pickled tomatoes, and the mother-in-law test
30 August 2015 · Jam
When I came to my husband's house as a bride, my mother-in-law put a jar of pickled tomatoes in front of me and said "open it". She did not say anything else. I opened it. She said "again", and I opened the second. At the third she nodded.
The test was not the lid. The test was: did I know a good pickle by the smell when the lid came off. I did. Since then I have opened 40 jars a year and I think about her every time.
Recipe for 1 three-litre jar: small firm tomatoes, 5 cloves of garlic, dill with seeds, a horseradish leaf, a cherry leaf, 3 peppercorns. Brine: 1 litre of water, 2 spoons of salt, 1 spoon of sugar. Pour hot over the tomatoes, close. Wait 3 weeks. If it fizzes, you did something wrong. If it is silent, it is ready.
