Quince murabba for my daughter's engagement
28 January 2017 · Jam
My daughter is engaged. I am not sure I am ready. But the quince is ready, and in Irad when a girl is engaged you give her family a jar of murabba, so my hands decided before my head.
Quince is hard like a stone and golden like autumn. Peel it, cut in eights, take out the pips (keep them, they make a jelly later). Soak in water with lemon so it does not go dark. 1 kg quince, 800 g sugar, 3 glasses water, one cinnamon stick. Boil the syrup, put quince in, simmer 40 minutes, leave overnight, boil again 20 minutes. It turns red. The red is a miracle. Nobody knows why.
The jar goes to the boy's mother with a cloth over it, on a plate with a piece of bread. I made seven jars and ate one. For the nerves.
